Gather with us for The Last Light Dinner, a five-course New Year’s Eve celebration honoring the flavors and spirit of our coastline. This is Gyppo’s most intimate event of the year — an evening shaped by winter ingredients, thoughtful pairings, and the glow of the final sunset of 2025.

We’re bringing together the richness of the season for a one-night-only menu built around coastal seafood, ember-warmed vegetables, and slow-braised comfort. From the first sip to the final toast, each course highlights the connection between land, water, and craft — all paired with beer-forward brews, hybrid pours, and N/A options for every guest.

The evening begins with saffron-steamed clams, followed by a deeply flavorful Dungeness crab bisque and a warm roasted squash and burrata salad. For the entrée, guests will choose between cocoa-braised beef short rib or roasted salmon with a citrus–miso glaze. The night concludes with a warm smoked–sea-salt chocolate torte served in cast iron.
